RECIPE | Little Miss Whoops' Pancakes

So when my daughter brought home the Mr Men magazine and saw Little Miss Whoops' pancake recipe, we just had to try them out.  We had all the ingredients in the cupboard so there was no excuse!  They re super quick and easy, which is just what we like and they taste amazing too.



The original recipe says to add the blueberries into the the pancake mix but we left them out and served them with fresh blueberries and maple syrup.  But you can add whatever you like, including chocolate chips.  I'm sure they would be a big hit too.

Anyways, here's what we did.

Little Miss Whoops' Pancakes

Ingredients

 200g Self raising Flour
1 tsp Baking Powder 
1 Egg
300ml Milk
Blueberries
Maple Syrup
Butter

Method

1.  Mix the flour, baking powder and a pinch of salt in a large mixing bowl.
2.  In a separate bowl, beat the egg and milk together.
3.  Whisk into the flour mixture to form a smooth, thick batter.  We didn't use all the milk and egg mix, just enough to make a thick batter.
4.  Heat a frying pan and melt a tiny bit of butter and wipe off with a kitchen towel.
5.  Drop a tablespoon of batter into the pan and cook for 3 minutes on each side until golden brown.
6.  Serve with blueberries, maple syrup, strawberries, chocolate spread, honey or anything you like.

  1. This is exactly how my mom makes them. But she doesn't add baking powder so they look like crepes and not so fluffy. They're still sooo yumm, though, rolled with some jam! :)
